Easy Mediteranean Stir Fry

Have you ever had one of those evenings when you look in your refrigerator awaiting dinner inspiration and all you see are a bunch of things that don’t seem like they should go together? There is a solution for that! It’s called stir fry.

You have a protein? Check!

You have some tasty, fresh vegetables?Check!

You have some Moxy spices to make the flavor pop? Check!

Then you have yourself a stir fry! Easy-peezy, lemon-squeezy.

Here’s what I had in my refrigerator last night:

  • 3 chicken breasts
  • 2-3 cups broccoli florets
  • 1 red bell pepper
  • 2 handful baby carrots
  • ½ yellow onion
  • ½ cup chicken stock (option to use water instead)
  • ½ cup feta cheese (optional…but it made my kids happy)
  • Brown rice (also optional…but again, kids)
  • Moxy Mediterranean Spice Mix (new to my pantry!)

The kids were complaining of hunger the second we walked in the door from school and work, so I knew I had to make it quick.  

In 20 minutes I was able to do the following:

Cut the chicken into 1-inch cubes.  

Heat 2 tbsp of olive oil in a big skillet.  

Place chicken in the hot pan and sprinkle liberally with Moxy spices (I used 2-3 tbsp).  

Cook chicken all the way through while preparing the vegetables.

Chop all the veggies into bite sized pieces.

Once the chicken is finished cooking, set aside put the carrots and any other hard root veggie in the hot pan, chicken juices and all.

Saute for 4-5 minutes.

Add the other veggies, splash with chicken stock, put the lid on the pan and steam for another 5 minutes.  Stir occasionally.

Add the chicken back to the pan and mix all the ingredients.

Sprinkle feta cheese on top.

Serve alone or on a bed of brown rice.

 

That’s it!  In 20 minutes you have a warm, healthy meal that you can feel good feeding to your family after a long day.

 

My 9 year old told me that this was the best stir fry I had ever made.  Perhaps it’s because I made it with love…or perhaps it was the MOXY!   Bon appetit!
