This weekend we spent a few days in Southern California and really enjoyed the sun, beach and fun on the pier.  California is such a diverse state, with every different area having a specific culture and vibe.  We were in Santa Monica and stayed in the beautiful and classic Georgian hotel right on the waterfront.  Right across the street, there was a daily taco truck parked and ready to feed us nearly at any hour of the day.  While the food at the hotel and the local restaurants were all very good and the service was truly amazing, we definitely also enjoyed a couple of satisfying carne asada and carnitas tacos from those trucks!  If you’re looking for restaurant recommendations, my favorites this weekend were Water Grill and Del Frisco’s Grille. Get the oyster’s at Water Grill and the lettuce wrapped avocado chicken salad at Del Frisco’s – you won’t be disappointed!

After a fun and filling long weekend, it was time to get home and make some easy, semi-homemade comfort food for the family.  Last week, while I was in the local grocery store, I discovered a new brand that seemed to have a simple and nutritious ingredient list and zero added sugar!  So, now that we’re back in town, it was definitely worth a try.  The brand is called Amalia’s Cocina.  The ingredients all seem to be real food and the price was under $3 for a 12 oz. jar, which made enough chili for 2 good size portions.  The overall taste and texture was really good, but the sauce did lack a bit of spice for Derek and I , so we added some heat and flavor via chili powder and smoked paprika, plus some hot sauce when serving. But, overall, it was a really filling and delicious meal that took less than 30 minutes to prepare!  It was filled with protein and didn’t have a lot of carbs, salt and obviously no sugar. We’d definitely buy it again and I’m excited to try the other sauces that the company makes.  Looking forward to reviewing those next time.

Ingredients

  • 1 tsp. vegetable oil
  • 1 lb. cubed chicken
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 cup chopped green and red peppers
  • 1 16 oz. jar kidney beans
  • 12 oz. jar Amalia’s Cocina Chili Colorado sauce
  • 1 large avocado
  • 1/2 cup shredded mozzarella

Directions

  • Warm oil over medium heat
  • Add chicken and cook, turning frequently until nearly cooked through (approximately 10-15 minutes)
  • Add onion and garlic to the pan and mix well with the chicken, cook for approximately 3-5 minutes, or until onion begins to look translucent
  • Add green and red peppers and cook for another 5 minutes, stirring frequently
  • Add kidney beans and stir well
  • Add sauce, and simmer on medium-low heat for approximately 10 minutes or until sauce thickens and is fully incorporated with all the other ingredients
  • Serve topped with 1/2 the avocado and 1/4 cup cheese per serving
