Are we already in the middle of January!?  2017 went by so quickly and was filled with so many twists and turns.  This felt like the first year that we really started showing the boys the world. Kicking off last Thanksgiving with the boys first trip over the Atlantic to England, then south to Costa Rica, and west to the Grand Canyon this Thanksgiving.  It’s so wonderful to have them so excited to see the different parts of the world and seeing it through their eyes has been tremendous. One of my favorite things about their expanded world is also their expanded palettes. I’m loving watching them get more and more adventurous in trying new foods with new flavors.  Some of them they love, others they’re still unsure of, but this Mediterranean spice chicken is an easy crowd pleaser for them. The flavors are somewhat familiar – fragrant and enticing, but also unique.

The Mediterranean Spice Mix we created is incredibly flexible and can be used in so many recipes, but this one is really simple (and is also zero points on the new Weight Watchers Freestyle program!).  Just use a couple of tablespoons as a dry rub on chicken breast, squeeze a lemon and roast, grill or pan fry.  The flavors will come out fresh and delicious, even the most picky eaters like this delicious dinner.  I hope you’ll try this one and send over some feedback and ideas on how you’ve experimented with the recipe and the spice mix.

Do Good, Eat Great and Put some Moxy on your Plate!

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 tbsp Moxy Mediterranean Spice Mix
  • 2 cloves garlic, minced
  • Juice from one lemon
  • 1 tbsp vegetable or canola oil
  • 1 tbsp butter

Directions

  • In large zip top bag, add chicken, spice mix, lemon juice and garlic. Mix well
  • Marinate for at least 15 minutes and up to 1 hour
  • In a large pan over medium heat, warm butter and oil
  • Place in chicken, leaving space between pieces and cook uncovered 8 minutes on each side or until chicken looks golden on the outside
  • Cover and cook thoroughly over medium/low heat for another 10-15 minutes, or until meat thermometer registers 165 degrees Fahrenheit
  • Remove from heat and let sit approximately 5 minutes before serving
  • Serve with roasted vegetables like carrots or brussel sprouts
