Mediterranean Caprese Chicken

Every time I think I’m done making Caprese style anything, I decide I have to do just one more!  Today was no exception, I needed to make something yummy, easy, quick and healthy for dinner.  I just happened to have replanted a new basil plant and it was begging for some time with the fresh tomatoes from the local market.  Since we almost always have either Mozzarella or Feta on hand, Caprese meals can be an easy go to for dinner.  Plus, they’re great recipes for getting the kids involved since they can have fun with the layering.

This recipe is extremely easy, requires very few ingredients and takes just 30 minutes.  If you’re not eating low carb, you can pair this chicken with pasta and I’m sure it would be delicious.  But for us, we go the no-carb, low sugar sides, so zoodles were my solution.  The Moxy Kitchen Mediterranean Spice Mix also simplifies this recipe quite a bit because you don’t have to find all the herbs to make this dinner truly burst with flavor, it’s all packed into the spice mix packs for you.

Last but not least, you could definitely make this vegetarian by skipping the chicken altogether and just doing the tomato, basil and mozzarella right on top of the zoodles or pasta.

Ingredients

  • 1 tbsp vegetable oil
  • 1-1.5 lbs. boneless, skinless chicken breast, lightly pounded (use plastic wrap to cover the chicken and pound the meat with your fist to flatten for even cooking)
  • 3 tbsp. Moxy Kitchen Mediterranean Spice Mix (divided into 2 tbsp and 1 tbsp)
  • 3 medium zucchinis
  • 1 tomato, sliced
  • 3-4 oz torn fresh mozzarella (depends on how cheesy you like it), divided into 4 equal servings
  • 1/4 cup chopped fresh basil

Directions

  • Coat chicken with 2 tbsp of Moxy Kitchen Mediterranean Spice Mix
  • Heat cast iron skillet to medium high heat, add oil
  • Place chicken onto skillet, cook approximately 10 minutes then flip
  • While chicken is cooking on first side, spiralize your zucchini.  Place it into a bowl with remaining 1 tbsp of Moxy Kitchen Mediterranean Spice Mix
  • Approximately 5 minutes after you flipped your chicken, layer tomato slices and each portion of the divided cheese, one per chicken breast
  • Cover and cook another 5 minutes
  • While chicken is finishing up, on a large skillet, heat 1 tbsp. oil and add in all zucchini. Try and use a pan large enough that you have just one layer of vegetables.  Toss frequently until zucchini softens slightly and remove from heat ( approximately 5 minutes)
  • Check chicken for 165 degrees and remove from heat and cover to rest while you finish the zucchini
  • Layer zucchini, chicken, top with basil and enjoy!
