OK, so I’m clearly on a taco kick at the moment.  Last week, we were making nachos and this week, I’m craving the Layered Taco Salad that we make for all of our tailgates, family funday’s, etc.  This salad has been a staple at my family gatherings for over a decade but always had a lot of salt and a bit of sugar to make it work.  My mom is truly the one that perfected this recipe over the years and it’s the first thing we ask for when we’re gathering at her house.

My version of this Layered Taco Salad is easy, just a handful of ingredients and our Moxy Kitchen Taco Seasoning makes this easy to assemble in under 10 minutes.   Believe me, it’ll be gone just about as quickly as you make it, so always double this one if you want leftovers!

We use our semi-homemade chips to keep the salt low, but you could also eat this straight, without any chips on the side.  This week, that’s how I’m having it, no sides or carbs at all.  For any vegetarians out there, this is a great and filling meal loaded with protein and good fats.

Have fun with this layered salad, it’s comfort food and healthy food and you can choose to add more or less of any of your favorite layers.

Ingredients

  • 1 cup sour cream
  • 1 1/2 tbsp. Moxy Kitchen Taco Seasoning Mix
  • 1 16 oz. cans refried beans, no salt added
  • 1 16 oz. Holy Guacamole Classic Dip
  • 1 medium tomato, chopped
  • 1/2 cup chopped green onions (scallions)
  • 1/2 cup chopped black olives
  • 2 cups shredded cheese, your favorite Mexican mix
  • Corn chips for serving

Directions

  • In a small bowl, mix Sour Cream and Moxy Kitchen Taco Seasoning
  • In large glass baking dish, layer ingredients in the following order and serve with chips or just a fork!
    • Beans
    • Seasoned Sour Cream
    • Avocado
    • Tomato
    • Green onions (scallions)
    • Olives
    • Cheese
