Moxy Thoughts

I don’t know about you, but I can make any sort of protein and the kids are happy to turn it into tacos.  So I was looking for a way to get some variety into their meal.  Although nachos are extremely close in to tacos, I’m going to go ahead and call it variety!  This recipe is so easy, just brown some meat, grill some tortillas and top with whatever you have on hand.  Using our Moxy Kitchen Taco Seasoning makes the recipe that much more simple and you won’t have to worry about any extra salt or sugar on the plate.  That’s because we load our seasoning mixes with a lot of really flavorful herbs and spices that create delicious flavors so you won’t notice that you’re not having salt or sugar.

The tip for these nachos is to make sure that you use fresh, good quality corn tortillas and roast them long enough to crisp them into chips . If you use the regular tortilla chips, you’re getting a ton of salt and they’ve likely also been fried twice.  It does take an extra step to make your own, but the taste is great and it’s just that much healthier for you and the family.  An alternative to the tortillas is to use fresh polenta and slice into thin slices, top with the Moxy Kitchen Taco Seasoning Mix and fry with a bit of vegetable oil.  I actually prefer this version, it’s more like a meal and less like a snack and it’s so good!

As for the meat, I used organic lean ground beef, but you could also do this with chicken or even pork.  Just make sure that you season well.

Lastly, my favorite tip is to use shredded queso cheese from the ethnic market.  The cheese is just perfect on nachos and we like it a lot better than the yellow cheddar.

Ingredients

  • 4 corn tortillas, sliced into quarters
  • 1 tbsp vegetable oil
  • 1 lb. ground beef (or chicken)
  • 2 tbsp. Moxy Kitchen Taco Seasoning
  • 1 egg, yolk and whites stirred together
  • 1/2 cup queso cheese
  • 1/4 cup chopped red peppers
  • 1/4 cup salsa
  • 1/2 avocado, sliced

Directions

  • Preheat oven to 400 degrees
  • On a large cooking sheet, spread out the tortilla pieces and with a brush, brush evenly with oil
  • Cook approximately 10 minutes and flip
  • Cook tortillas another 10 minutes or until they begin to crisp or curl up, remove and let cool slightly
  • While tortillas are cooking, mix Moxy Kitchen Taco Seasoning, egg and beef until meat is fully coated
  • Cook meat in a warm cast iron skillet, frequently turning
  • Cook approximately 8 minutes, or until meat is just slightly browned
  • Top tortilla pieces with browned meat, peppers, cheese and avocado and serve
