I started the new Weight Watchers program last week in an effort to try and lose that last 10 pounds that have been hanging around since I had my babies – which was over 8 years ago now!  This year, with everything else going on, the new Weight Watchers Freestyle program appealed to me and a friend convinced me to join with her – so here we are!  I have to admit, the new program does seem to be a lot easier to do with my schedule and I hope it’ll work for me.  The best part is this new Freestyle foods list that allows you to eat a lot of healthy, high protein, low carb and low sugar foods for 0 points  This is great in my opinion, because it naturally gets you to eat more protein and less sugar.  Obviously I’m all for that.

As part of this new program, eggs are ‘free’, so I’ve been eating them in every way, shape and style I could come up with.  I’ve already created a Shakshuka recipe with our North African Spice Mix, but I wanted to do a more simple breakfast egg as well.  So, this is about as easy as it gets for a veggie filled scrambled egg. You can use any vegetable you have in the refrigerator, I happened to have 1/2 of a yellow pepper and 1/2 of a zucchini, so that’s what went into my scramble.  But this would work great with mushrooms, tomatoes, or green peppers.  I would also recommend adding some fresh garlic and if you like heat, maybe a touch of jalapeño, too.

Have fun with this one, it’ll liven up your breakfast and keep you full for hours.

Directions

  • Heat oil over medium heat in cast iron skillet, or good non stick pan
  • Add vegetables and spice mix and mix well
  • Cook approximately 5 minutes and add scrambled eggs
  • Stir regularly to avoid eggs sticking
  • Serve and enjoy!
