Turmeric Spiced Grilled Vegetables

Summer is absolutely my favorite time of year – the sunshine, the weather, the pace and most of all, the produce!  This is our fourth year growing our garden and every year I feel like we get better and better at creating consistently delicious and nutritious fruit and vegetables.  This year, we’ve planted our largest variety of seeds yet and I’m anxiously awaiting to see how many of them turn into yummy vegetables.  I’m not an expert yet, but I like this quick cheat sheet to help me figure out my garden.

One of the plants that has always been a stellar grower in our garden is the zucchini and over the past few years I’ve created so many different recipes using this amazing vegetable.  I use them spiralized to replace pasta, shredded in bread, sliced into a fluffy quiche and just simply chopped and grilled.  The flavor of this squash is so flexible and it is packed with great nutrition like Vitamins A, B1, B6, magnesium, folate and even packs omega 3 fatty acids!   With all of those great benefits, it’s easy to think you can’t make the vegetable any better but since I’m always looking for ways to amp up both flavor and nutrition I thought I’d try a super flavorful beneficial spice mix to make these zucchini super food!  We’ve written about the benefits of spices before in Kara’s post called Spice up your Life!  Kara talked about how useful certain spices like turmeric, cumin and cinnamon can be for digestive health and reducing the risks of certain inflammatory diseases like arthritis, diabetes, cancer and heart disease.  Plus, these spices are truly delicious and create layers of flavor to make good food even better.  So with that, I’ve mixed up a few yummy spice mixes that I’ve been using on a few different vegetables and proteins – this one is a great and simple turmeric blend that is full of flavor and packs a nutritious punch.  Try it out with zucchini, cauliflower and tomatoes for a vegetarian power bowl, or toss with chicken on the grill for a middle Eastern style meal.

Ingredients

Turmeric Spice Mix

  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp coriander
  • 1/2 tsp mustard powder
  • 1/2 tsp red chili pepper flakes

2 cups chopped vegetables of your choice, works best with zucchini, cauliflower or garbanzo beans

Directions

  • Combine all spices and coat vegetables, beans or 3/4 lb chicken.
  • Let marinate u to 30 minutes
  • Grill or stir fry until cooked and serve with 1 tbsp. low fat Greek yogurt
