Moxy Thoughts
While the temperatures are plummeting in the middle and east part of the country, it is starting to warm up a bit here in California. Plants are starting to bloom as the rain continues, but slows. It’s also one of our busy times in the house. The kids are playing basketball, taking music lessons, going to school and birthday parties. So when it comes to what to put on the dinner table, I’m constantly trying to find recipes and ideas that are 30 minutes or less from opening the refrigerator door to sitting with a glass of wine ready for the day’s recaps from the whole family. This recipe for Artichoke and Spinach chicken is a new one that I created to get as much healthy benefits on the plate as I can in that short preparation window of time.
I try to always have frozen spinach on hand, jarred marinated artichokes and plenty of chicken breast, so this recipe can be thrown together without another trip to the store. As a working mom, this is the most important trick in the book – always keep your home stocked with frozen vegetables, canned legumes and plenty of protein options. And of course, keep your stock of Moxy Kitchen Seasoning and Spice mixes in your pantry to make flavorful foods easily without any sugar or salt.
I generally love artichokes, but I really don’t like to make them from the raw kind. Pretty as they are, they’re difficult to eat and even more difficult to cook. So, I always go for the jarred variety from our store. One of my favorite fun facts about artichokes is that they are one of the best ways to get fiber in your diet. An artichoke has more fiber than a cup of prunes! Plus, it packs in 4 grams of protein, which really is quite a lot for a vegetable.
You all know how great spinach is for you, so I don’t feel like I need to get into all of that, but as a quick synopsis, spinach is an extremely nutrient rich vegetable. Spinach is loaded with antioxidants and is even thought to help reduce stress. Seems like a no-brainer to have this staple in your freezer at the ready.
