Easy Corn Salsa Stuffed Avocado

This weekend was so fun! My brother and his family came out to visit a few West Coast universities and that meant we got a weekend with the whole family. Now that the kids are all getting older, these weekends are more and more rare. I wanted to be sure it was full of fun, relaxation and quality time together. We needed easy, delicious and healthy food to make sure everyone is happily eating while we spend the weekend together. We have a mix of diets in our family – no sugar, no dairy, low gluten, vegan – so I had a fun challenge on my hands.
The menus this weekend included Grilled Mediterranean Salmon, Yucatan Grilled Mixed Vegetables and Easy Open Flame Shrimp, I’ll get those recipes up as soon as I can. When everyone was gone, we had some yummy leftovers in the refrigerator and so we mixed up this super quick Corn Salsa and stuffed our ripe avocados. The recipe is very flexible and you can easily swap whichever veggies you have and even add beans and proteins if you want to make it a complete meal.

Ingredients
- 1.5 cups sweet corn, trimmed from the cob
- 1/4 cup diced red onion
- 3 garlic cloves chopped
- 1 small tomatoes, diced
- 1 tbsp. chopped cilantro
- 1 tbsp. Moxy Kitchen Taco Seasoning
- Juice from 1 lime
- 2 avocados, halved with pit removed
Directions
- Mix all ingredients except avocado
- Scoop as much salsa as fits into the avocado and serve the rest on the side or save for later
