Easy Grilled Figs and Goat Cheese

It’s 5 days until August and the most amazing surprise showed up at our market this week – figs!  Figs are generally in season from August through October, but once they’re picked they don’t last long, so use them close to when you buy them.  Figs have been around since ancient times and are filled with nutritional goodies like potassium and magnesium.

At our house, we love figs and make them as a delicious and easy dessert whenever we can.  The flavor is remarkably sweet but also complex and works so well topped with balsamic vinegar and goat cheese.  I know a lot of people who just trim and eat them fresh, but I think that grilling them to get that caramel flavor just makes them absolutely irresistible.

Ingredients

  • 1 lb. fresh figs, washed, trimmed and halved
  • 1 tbsp. balsamic vinegar
  • 1/2 cup goat cheese

Directions

  • Set oven to broil or turn on grill to medium heat
  • On a sheet pan, lay out figs, cut side up
  • Grill for about 5 minutes or until figs begin to soften slightly
  • Remove from heat and top with balsamic and a teaspoon of goat cheese on each half of fig
  • Grill for another 3-5 minutes or until the cheese begins to melt
  • Remove from heat and serve immediately
