Easy Grilled Mediterranean Zucchini Boats

It’s July in the Central Valley, and normally, we’d be going to swim meets every weekend, grilling and having pool parties.  Just like everyone else, we’re definitely not doing anything normal.  But, that doesn’t mean that we’re changing our love of eating great food while staying healthy.  That’s why these easy grilled mediterranean zucchini boats are a favorite go to.  Our garden has been giving this year and our zucchini and yellow squash plants continue to thrive.  Finding new ways to use all those yummy squash is a challenge I’m happy to take on every year.

Zucchini is packed with Vitamin A, C, Potassium and folate.  It also contains the all important fiber we need in our lives.  It’s super easy to grow, and can be prepared in a lot of different ways.  I’ve tried grilling, roasting, spiraling and even air frying both the zucchini and the yellow squash.  The most important element of cooking is that you have to tap it dry as much as possible so that it cooks crisp and not wet.  This Easy Grilled Mediterranean Zucchini Boats recipe highlights the squash perfectly.

For this recipe, I decided to grill the zucchini on my cast-iron grill in the broiler.  Normally, I’d do this on the outside grill, however it was 105 degrees outside!  I have to admit, my grill pan is actually a little easier than the outdoor grill, you just miss out on the bit of smokiness that’s just impossible to replicate in an oven (safely!).

You can top your open grilled zucchini boats with just about anything.  I was going for a mediterranean vibe, mostly because I had some goat cheese that I was craving and I love using sun-dried tomatoes with zucchini.  Additionally, I wanted to make this keto friendly and as always it’s low carb and no sugar.  I used our Moxy Kitchen Mediterranean Spice Mix for the chicken to create a cohesive flavor profile.  Next time, I try some swaps.  The Moxy Kitchen North African Seasoning can flavor chickpeas and swap the tomatoes for onions to get a completely different take on the dish.

Ingredients

  • 1 large zucchini or 2 small
  • 1 lb. boneless, skinless chicken breast, chopped into 1″ cubes
  • 2 tsp. vegetable oil
  • 3 tsp. Moxy Kitchen Mediterranean Spice Mix
  • 1/4 cup julienned sun dried tomatoes
  • 2 oz. goat cheese
  • fresh basil, for garnish

Directions

  • Heat cast iron grill or outdoor grill to high
  • Half the zucchini and scoop out the seed area with a spoon, set aside and chop
  • Season each half of the zucchini with first teaspoon of oil and a pinch of salt and pepper
  • Lay each zucchini half, flesh down on grill and cook for 8-10 minutes or until grill marks appear, remove from heat
  • While zucchini is cooking, warm a large pan over medium heat
  • Toss chicken with Moxy Kitchen Mediterranean Spice Mix and remaining oil
  • Add chicken to pan and cook for approximately 10 minutes, flip and cook another 5 minutes or until chicken is nearly fully cooked through
  • Toss in zucchini flesh from the boats and sun dried tomatoes and cook together for about 2 minutes
  • Remove from heat and fill the zucchini boat halves with chicken mixture.  Top with goat cheese and cook in high broil for 3-5 minutes until goat cheese melts
  • Remove, top with basil and serve immediately
