I feel like we were just getting over the holidays and all of a sudden I look at the calendar and it’s May!  Don’t get me wrong, I absolutely love that summer is nearly here.  The sunshine, flowers, fresh fruit and veggies at the farmers market – all of it truly warms my spirits.  With all the goodness of spring, we also have the mounting challenge of all the kids’ activities every night.  This can get extremely hectic as the boys are getting older and dinner at the table seems like a distant memory at the moment.  That’s why I was so happy when I recently discovered Instacart.  Instead of having to spend time going to the grocery store, or even worse, the club store, I was able to simply schedule my items to show up at my front door within 24 hours!  This is a game changer for us.  Plus, it means that I can get some bulk items into the freezer for nights that we really only have 20 minutes to get dinner in everyone’s bellies before it’s time to wind down and head to bead.

This easy Lemongrass & Lime Shrimp Stir Fry is perfect for these busy weeknights.  The meal is filled with healthy veggies, thanks to the bulk Kirkland stir fry vegetable pack that you can get from Costco (via Instacart!) and the large Kirkland bag of frozen, pre-cooked Shrimp.  With those 2 bags of frozen food in your refrigerator and a packet of the Moxy Kitchen Lemongrass & Lime Seasoning Mix, dinner is ready within 20 minutes of turning on your stove.  My kids love the dish just like this, but my husband adds a good amount of hot sauce on top to make it more of a citrus/spicy stir fry.  Either way, it’s delicious, nutritious and easy!

You can substitute fresh vegetables into this mix, just adjust the cooking times to account for already thawed ingredients.  Additionally, I believe there are small, non-frozen vegetable stir fry mixes at the grocery store, play around with whichever ones are most appealing to you.  Of course, you could also swap the shrimp with chicken, beef or tofu.  The flexibility is endless.

Ingredients

Directions

  • Heat oil in wok, or deep pan over high heat
  • Toss in vegetables and cook approximately 15 minutes, tossing or stirring frequently until they soften and begin to warm
  • Add shrimp and seasoning mix and toss/stir well
  • Cook another 5-10 minutes until shrimp is pink all the way through and the vegetables are completely soft but not over cooked
  • Serve immediately (add hot sauce if you want the extra heat)
