Spring is Here!

I love spring because the sun starts to shine more, the flowers begin to blossom and our jackets get a whole lot lighter.  And, with two boys, it also means we spend a lot of evenings at practice or games now that the spring sports seasons are getting started.  We need to have high protein, fast, easy and of course delicious dinner on the table in less than 30 minutes or the boys end up snacking on anything in their line of sight.  Cauliflower is one of those magic ingredients that is always in our refrigerator because it can be transformed into a rice, a side or even a pizza crust with a very limited amount of effort.

Use any ingredients you have

For this recipe, match the flavors of the seasoning to the protein.  I like to keep a package of Aidell’s sausage in our refrigerator for easy and healthy protein that can be added to boost both the protein and the flavor of a dish.   Our favorite flavor is the Artichoke and Garlic, because it’s low in sugar but filled with Mediterranean flavor that matches perfectly with our Moxy Kitchen Mediterranean Spice Mix.

Nearly all the other ingredients in this recipe are flexible because you should use any vegetables you have on hand. Add cheese if you want some dairy or swap the meat for beans or mushrooms if you’re vegetarian.

Simplify your prep with pre-riced cauliflower

Simply wash your cauliflower and run it through the chop blade on your food processor.  If you don’t have one of those, these days you can find cauliflower already riced in some fresh grocers and nearly always in the freezer section.  If you’re buying frozen, you’ll want to microwave the rice per the instruction on the bag, and then be sure to use a paper towel to remove the extra moisture.

Do Good, Eat Great and Put Some Moxy on your Plate!

 

Ingredients

  • 1 head riced cauliflower (or 1 package pre-riced cauliflower)
  • 1 package Aidell’s Artichoke and Garlic Smoked Sausage
  • 3 tablespoons Moxy Kitchen Mediterranean Spice Mix
  • 1 tbsp. extra virgin olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 2 tbsp. Sauvignon Blanc or your preferred dry white wine
  • 1 1/2 cups broccoli, cut into florets
  • 2 tbsp. parmesan cheese, optional

Directions

  • If using fresh, whole cauliflower head, chop and rice in food processor
  • Remove from processor and pat dry in medium bowl
  • Warm large pan and prepare sausage per instructions on package (you can also grill)
  • Remove from pan and cut into 1″ slices, set aside
  • Warm olive oil in large pan
  • Sauté onion and garlic until slightly caramelized
  • Add cauliflower rice and Moxy Kitchen Mediterranean Seasoning and stir well.
  • Cook approximately 3 minutes or until cauliflower is warm
  • Add wine and return sausage to pan, combine all ingredients well
  • Add broccoli and cook until it turns a bright green
  • Remove from pan and plate, top with cheese if using and serve warm
