If you’re like us, you’re tired of  making chicken the exact same way every time,  This week, I hit a rut and needed to find a new easy chicken recipe.  Given Fathers Day is coming up, I was experimenting with some options that would make my hubby and my dad equally excited to eat.  Not an easy task!  The great news is that Peppercini are a secret weapon in my refrigerator that can truly transform  regular meal into something unexpected.  We use these spicy little peppers in a ton of recipes.  The other night, I loaded them on top of grilled portabello mushrooms and made the into burger condiments.

This recipe is incredibly easy and very flexible.  Just use whatever the fresh vegetable is of the season to add bulk to the pan.  At the moment, that’s zucchini!  Toss with EVOO and our Moxy Kitchen Mediterranean Mix and you’re got dinner on the table – one pan and just 30 minutes.

Do Good, Eat Great and Put Some Moxy on your Plate

Ingredients

  • 1 lbs. skinless boneless chicken breast
  • 2 tbsp. Moxy Kitchen Mediterranean Mix
  • 1 tsp. EVOO
  • 1/2 cup yellow onion, chopped
  • 5 garlic cloves, minced
  • 1 cup chopped zucchini (or other fresh vegetable like Mushrooms or yellow squash)
  • 2 tbsp. Peppercini
  • 1 tbsp. parmesan cheese (optional)

Directions

  • Toss chicken and Moxy Kitchen Mediterranean Mix with 1 tbsp. olive oil
  • Heat remaining oil in pan
  • Add onion and garlic, let cook until just slightly glazed
  • Add marinated chicken and let sear for about 5 minutes, turn and sear another 5 minutes
  • Add zucchini (if using) and peppercini and toss well with onion and garlic
  • Cover and cook for 10 minutes or until center of chicken is no longer pink
  • Serve hot, with a sprinkle of parmesan cheese (optional) best paired with Sauvignon Blanc or  other crisp white wine
