I don’t know about you, but on a Wednesday night, the only thing I want is a healthy, quick and yummy dinner that everyone in my family is happy to eat.  Can’t take a long time or a lot of ingredients, because I’m nearly always missing at least one or two items from a recipe to make anything exactly the way I want it.

That’s why this Lemongrass & Lime pan roasted salmon is such a great go-to in my house mid week.  Stop at the local grocery that stocks your freshest fish in the area and just get about a pound to a pound and a half of your favorite fish.  My family loves salmon, for its meatiness and neutral flavors, but you could also use a good white fish or even Mahi Mahi for this one.  It’s literally the easiest recipe ever.

Take your fish, coat in our newest Lemongrass and Lime Seasoning Mix and pan roast with a pat of butter in a cast iron skillet.  Done and done in about 15 minutes from when you walk in the door.  We serve this with anything – brussels sprouts, roasted yams (great new recipe here for Spicy Cinnamon Yams) or just plain old couscous or quinoa.

Hope you enjoy this recipe, mess around with the sides, but always make enough fish, I never have any leftovers from this one!
