Busy Weekday Dinners
It’s Monday in April, that means that after a full day of work we have a full evening of activities with the boys: swim, baseball and music lessons. It’s a busy way to start the week, so I have to be prepared to get dinner on the table within 20 minutes of getting home. On days like these, I like to make my Moxy Mediterranean Salmon with North African Cauliflower rice. It’s healthy and filling, but not so much so that the boys will be too bogged down. Too many carbohydrates before swim practice is not a good combination. On days like these, I just walk in in my heels, throw on an apron and get this meal on the table.
Too Easy to call a Recipe
This meal is tough to call a recipe because it’s just so completely easy and fast. The whole thing, side and main, are just 5 ingredients! Our Moxy Kitchen Mediterranean Spice Mix is perfect for any fish because the blend of oregano, thyme and sage. These herbs help make the fish taste really fresh and yummy. To save yourself even more time (and fewer dishes), you can buy the cauliflower already riced. I nearly always have a head of cauliflower in the refrigerator because it’s a truly flexible ingredient that you can use in so many ways. For this dinner, I like to use the North African spice blend because I think the cinnamon is a nice pair to the salmon. If you’re not a fan of our North African, any one of our other spice blends work with cauliflower because it’ll just take on the flavor of the blend.

Moxy North African Cauliflower Rice
Directions
For the Salmon
- Heat oil in cast iron pan
- While heating, coat salmon evenly with spice mix and juice 1/2 of the lemon
- Cook, skin side down for 5 minutes, flip and cook another 5.
- Cover pan and cook remaining 5 minutes until fish is just cooked through
For the North African Cauliflower Rice
While salmon is cooking…
- Rice cauliflower in food processor using shredding attachment or purchase already riced
- Heat oil in pan
- Drop in all rice, Moxy Kitchen North African Spice Mix and stir well
- Cook approximately 5 minutes and serve with salmon and serve with remaining lemon wedges
