As we’re nearing the long Memorial Day weekend, I’m getting ready for a couple of late mornings and relaxing days with friends and family.  One of the easiest ways for me to do that is to pre-make some super healthy breakfasts that the whole family can enjoy.   This recipe is one of my favorites because it’s easy to prepare, easy to serve and keep in the refrigerator for up to 2 days after you’ve made them.  Plus, you can literally throw any vegetables and/or firm cheeses that you have in the house and these will turn out delicious.

This recipe is no carb, no sugar and no salt when you use any of the Moxy Kitchen seasonings.  This time I used the Moxy Kitchen Mediterranean Spice Mix but it also works well with the Moxy Kitchen Steak Spice Rub.  I’ve recently been considering trying a Keto Diet and this simple breakfast is a great fit if you’re trying to follow that one.   If Paleo is your preferred diet, just skip the cheeses and swap for crumbled bacon or pancetta.

Ingredients

  • Vegetable oil spray or 12 muffin paper liners
  • 12 eggs, whisked
  • 1 cup milk
  • 2 tbsp. Moxy Kitchen Mediterranean Spice Mix
  • 1 zucchini, shredded
  • 1 red pepper, finely diced
  • 1 cup shredded parmesan cheese
  • 1/2 cup feta cheese

Directions

  • Preheat oven to 375 degrees
  • Spray regular muffin tin with vegetable oil, or alternatively line each cup with one paper liner
  • In large bowl, combine all ingredients until well mixed
  • Pour into each muffin cup evenly, approximately 3/4 cup per muffin
  • Bake for 30 minutes, or until a toothpick comes out dry from the center of the muffin
  • Can be stored covered in the refrigerator for up to 2 days
