Summer is here!

Is it just me, or did June come quickly this year?  Our neighbor reached out and let us know that all of his stone fruit trees are starting to ripen and to ‘come and get ’em!’.  Honestly, is there any text better than that?  The boys and I head over there and spent a wonderful morning picking apricots, peaches and pluots (a fruit I’d never seen before moving to California).  My mind went straight to a beautiful apricot salsa.  Once I saw that fresh fruit, I absolutely wanted to recreate it.  Apricot salsa can be used in so many different ways.  The apricots can easily be replaced with other stone fruit like peaches or nectarines.  Apricot salsa on North African chicken is such an easy family dinner that can be made quickly and the kids can even help.

Salsa is King!

When I think of salsa, I always want to have some citrus, some green herbs, onions, and a pinch of salt.  It’s honestly that easy to put together so many versions of salsa.  I’m growing tomatillos in the garden this year and so much of where those beauties will go is in a salsa.  The other thing that’s fantastic about salsa is that it is very healthy.  This apricot salsa is zero points in WW.

Secret Ingredient – Greek Yogurt!

The North African Chicken in this recipe just needs a simple, warm marinade.  The Greek yogurt gives it a bit of tartness that works so well with the apricots.  The secret ingredient is the Greek yogurt.  I learned this trick from this wonderful blog, A Communal Table.  Using Greek yogurt as part of the chicken marinade creates such moist and juicy chicken.  Of course, our North African Seasoning Mix is the other easy part of this recipe.  Just a couple of ingredients and your chicken is ready to start cooking.

Ingredients

For the apricot salsa

  • 1 cup chopped apricots (or other stone fruit)
  • 1/4 cup chopped red onions
  • 1 tbsp. chopped green onions, greens only
  • 1 tbsp. chopped fresh cilantro
  • 1 tbsp. chopped chives
  • Juice from 1 lime
  • Pinch of salt

For the North African Chicken 

  • 1.5 lbs. chicken breast (you can also use thighs if you prefer)
  • 2 tbsp. Moxy Kitchen North African Seasoning
  • 1/3 cup non-fat Greek yogurt
  • 1 tsp. each of salt and black pepper
  • 1 tbsp. vegetable or grapeseed oil

Directions

  • In medium bowl, combine all ingredients for chicken, make sure you coat each piece of chicken well, set aside
  • In small bowl, combine all salsa ingredients and set aside
  • Preheat oven to 450
  • Heat a large cast iron, or non-stick pan and add oil
  • Add chicken, and cook on each side for 5-8 minutes, until each side is seared
  • Place chicken in heated oven, cook for 20-25 minutes or until thermometer reads 150
  • Turn oven to broil, and cook 5 minutes on each side to seal in flavor
  • Serve with salsa
