It’s Wednesday night, which means we have 2 basketball practices, homework, and a busy night ahead of us.  That’s why dinner needs to be quick and easy, but filled with protein and filling.  Tonight, we made this amazing One Pan Easy Tuscan Chicken Recipe.  You can enjoy this recipe in less than 30 minutes from refrigerator to table.

Now I have to admit, this Tuscan Chicken Recipe is an adaptation of a few versions of the ones I found on Pinterest.  However, our Tuscan Chicken Recipe doesn’t have as many calories or fat because I decided to skip the heavy cream.  To be honest, that’s just because it didn’t happen to be in the refrigerator already!  This recipe uses the Moxy Kitchen Mediterranean Seasoning mix.

Chicken is something that I always have it the fridge, but often get very bored making.  There’s only so many times you can make chicken tacos and chicken tenders, am I right?  This One Pan Easy Tuscan Chicken Recipe is an easy go-to because it feels more complex, even though it truly isn’t.

If you’re on a Keto or other diet that minimizes tomatoes, you can swap them out and use mushrooms or just skip it all together.  Similarly, if you’re not using dairy, you can definitely leave the cheese off the top.  However if you’re not limiting dairy, please do add it, it’s such a satisfying bit of melty cheese on top.

If you do make this recipe as is, you’ll be getting tons of great nutrition.   This one pan easy Tuscan Chicken recipe has spinach and tomatoes, so you’ll get Omega 3’s, Vitamin A, and Vitamin C.  Plus, it’s high protein, low sugar and low fat.

Do Good, Eat Great, Put some Moxy on your Plate!

Ingredients

  • 1 tbsp. vegetable oil
  • 1.5 lbs. boneless, skinless chicken breast, cut into 4-5 oz. filets
  • Juice from 1 lemon
  • 3 tbsp. Moxy Kitchen Mediterranean Seasoning Mix
  • 1/2 cup chopped yellow onion
  • 4 garlic cloves, minced
  • 1/2 cup chopped fresh tomatoes
  • 1/4 cup diced sun-dried tomatoes in light oil, drained
  • 3 cups fresh spinach, washed and chopped
  • 1 cup shredded mozzarella cheese, optional

Directions

  • In bowl or zip top bag, marinate chicken in lemon juice and Moxy Kitchen Mediterranean Seasoning blend, up to 30 minutes ahead.  Or just long enough to chop your vegetables
  • Heat oil in a cast iron pan on medium-high heat
  • Place chicken breasts onto pan and sear on both sides, for up to 5 minutes per side
  • Cover and cook chicken for 10-15 minutes or until just cooked through, remove from pan and set aside
  • In same pan, add onion and garlic and quickly saute until golden
  • Add fresh tomatoes, toss well and sear for 3-5 minutes
  • Add sun-dried tomatoes and mix well,  cook for another 3-5 minutes
  • Place chicken back into pan, and pile spinach on top.  Cover and cook for 3-5 minutes or until spinach just begins to wilt.  You can add a touch of salt and pepper for a bit of additional seasoning
  • Finally, top with cheese, if using, and cover for 1-2 minutes until cheese just melts.
  • Remove from heat and serve immediately
