Shakshuka for Dinner

Some nights I get home from work late and realize that there is literally no protein in the refrigerator. That’s when I have one of those panic moments trying to figure out what will be for dinner. Do you guys ever have that experience? I’d like to say it’s rare, but that wouldn’t be entirely true! So, I was thrilled to discover this incredibly delicious concept of Shakshuka (translated as ‘all mixed up’). I had been seeing images of this enticing tomato and egg in one pan all over Pinterest but had never tried it, until recently. It’s changed our lives! In fact, now we don’t wait until I forget to buy protein, we look forward to making this Middle Eastern meal at least once a week.
This dish is evidently popular in Israel and North Africa with origins from Tunisia. The dish is a magical reinvention of poached eggs and although we love it for dinner, I believe it’s actually a breakfast dish in other parts of the world. With our new Moxy North African Spice Mix, you really only need a handful ingredients on hand and you can make this meal just about anytime. It cooks quickly and fragrantly and I promise, you’ll be hooked after the first bite!
There a couple of different versions of this recipe, but ours was inspired by this yummy version on the Healthy Maven. Ours, like hers, is with minimal ingredients and lots of beneficial spices but we did make sure there was no added salt or sugar in our version so that it works in all types of diets and meal plans. Ingredients
- 1 tbsp vegetable or canola oil
- 1 clove garlic
- 1/2 yellow onion, chopped
- 1 cup chopped sweet peppers
- 2 tbsp. Moxy North African Spice Mix
- 1 24 oz can no sugar added crushed tomatoes
- 4 fresh eggs
- 1/4 cup feta cheese, crumbled
- Chopped parsley to taste
Directions
- In large cast iron skillet, heat oil over medium heat
- Add garlic and onion and cook up to 3 minutes or until onion begins to turn slightly translucent
- Stir in peppers and cook another 3 minutes or until peppers soften
- Add Moxy North African Spice Mix and combine all ingredients until they are well coated
- Stir in tomatoes and mix well. Cook 5 minutes or until tomato sauce begins to very lightly boil
- Lower heat slightly and create a well in the sauce. Crack first egg into well and repeat for the next 3 eggs
- Cover and cook for 8 minutes for medium poached eggs (add another 2 minutes if you like your yolks completely cooked through)
- Remove from heat and serve immediately sprinkled with the feta and parsley
