Spicy Cinnamon Butternut Squash

When it’s still a little chilly outside, I can’t help but pull out a butternut squash and want to roast it with our new warm and spicy Moxy Kitchen Spicy Cinnamon Mix.  Butternut squash can be a bit tough to cut and seed, but the result is always oh so worth it!  My kids love it’s sweet flavor and I love the healthy vitamins that come from this super vegetable. The cinnamon and spice in our Moxy Kitchen Spicy Cinnamon Mix give the complexity you need to a now familiar side dish

This squash can work as a side or even mashed up as a delicious substitute to the normal mashed potatoes.  You can add butter to create some creaminess or serve it more like a traditional baked potato for a different presentation (layered with greek yogurt or sour cream, chives and bacon).

Overall, the key to butternut squash is that you should experiment with it.  The squash gives you so much flavor and nutrients that I’m guessing you’ll be as in love with it as I am!

Ingredients

  • 1 large butternut squash, peeled, seeded and cut into 1/2″ cubes
  • 2 tbsp. Moxy Kitchen Spicy Cinnamon Mix
  • 1 tsp. Coconut Oil or Olive oil

Directions

  • Combine squash and Moxy Kitchen Spicy Cinnamon Spice Mix well
  • On a large cookie sheet, spray squash with Coconut oil and broil over high heat for 15 minutes, watching carefully and turning when brown
