Vegetarian ‘Steak’ Mushrooms with Feta and Roasted Onion

Here in the Central Valley we’re really excited to get rain anytime we can. However, I’m starting to yearn for the sunshine so that we can start grilling and spending time outside again. I usually am the grill master in our family and I love to play around with the various ways to create new ideas out there. With the rain this week, that was unfortunately out of the question. So, I improvised with these beautiful mushrooms and used the broil setting on the oven to get as close as I could to that flame grilled taste.
I love using these large and gorgeous fungi to make a ‘meaty’ meal that is both filling, and vegetarian friendly. Even though I’m not a strict vegetarian, I tend to end up eating more than half my meals along those principles. I love to find new and exciting ways to create flavorful food without any added meat and this one may be one of my favorites.
Using our Moxy Kitchen Steak Rub makes this recipe incredibly quick and easy to put together and gives the mushrooms a unique and satisfying flavor . I think that using our Moxy Kitchen Yucatan Spice Mix could be another good alternative seasoning for these mushrooms. I’ll be giving that a try next time I run into these yummy veggies at the farmer’s market.

Ingredients
- 2 large portabello mushrooms
- 2 tsp. olive oil, divided
- 1 tbsp. plus 1 tsp. Moxy Kitchen Steak Rub
- 1/4 sliced red onion
- 1/4 cup cubed feta cheese
Directions
- Preheat oven on HI broiler
- Wrap cooking sheet in aluminum foil
- Clean mushrooms thoroughly and rub with olive oil
- Sprinkle generously on all sides with 1 tbsp. Moxy Kitchen Steak Rub
- With cap side up, broil mushrooms for approximately 10 minutes and flip
- While mushrooms are broiling, sprinkle sliced onions with olive oil and 1 tsp. Moxy Kitchen Steak Rub
- Add onions to cooking sheet during second 10 minutes of broiling
- Remove when mushrooms are browned and softened (they will appear darker and smaller than when they were raw)
- Serve with feta and sliced tomato slices (optional)
