This week was my son’s 11th birthday and my dad’s 80th, all in quarantine.  Even though we couldn’t have a big party, that didn’t  mean that we were going to skimp on having a great dessert.  When I’m trying to please kids and adults, I go for these super easy and extra tasty sugar free cupcakes.

Anyone who knows me knows that I don’t love to bake.  However, there is just not a lot of bakeries around us that make sugar free desserts.  When I discovered the Pillsbury sugar free mixes, it made life so much easier, and tastier!  Pillsbury makes a whole line of sugar free products, but our local store doesn’t carry all of them.  The sugar free yellow cake and the fudge brownies are delicious.  We make cakes and cupcakes from the yellow cake pretty frequently.  These super easy and extra tasty sugar free cupcakes are a hit every single time I make them.

I personally love icing and frosting, which is by definition a challenge without sugar.  That’s where Stevia has been a huge help.  My son has become a whipped cream master.  When we’re making whipped cream for these tasty sugar free cupcakes, he swaps the real sugar for stevia.  Honestly, I don’t think you can taste the difference and it makes the whole dessert 100% sugar free!  From scratch whipped cream is totally worth making.  Homemade sugar free whipped cream only takes a couple of minutes.  You can refrigerate it for up to 3 days to use on fruit for a sweet, no guilt treat.  It’s also really good in crepes and on top of waffles.  Check out the recipe here for tasty and healthy crepes and here for heart healthy whole wheat waffles.

Ingredients

Sugar Free Whipped Cream

  • 1 cup heavy whipping cream
  • 2 tsp. Stevia granular sugar substitute

Sugar Free Yellow Cupcakes

  • 1 box Pillsbury Sugar Free Yellow Cake Mix
  • 1/3 cup vegetable oil
  • 3 eggs

Directions

Sugar Free Whipping Cream

  • Pour all of the heavy cream into a medium bowl
  • With a hand blender, blend on medium for approximately 3 minutes or until soft peaks begin to form
  • Add Stevia and blend another 30 seconds or until texture is soft.  Add more stevia to taste if desired

Sugar Free Yellow Cupcakes

  • Preheat oven to 325
  • Blend all ingredients with a hand blender on medium for 2 minutes
  • If doing cupcakes, fill cupcake tin with liners or spray well with cooking oil to prevent sticking
  • Fill each cupcake 3/4 full and bake for 19-23 minutes (follow directions on box if doing other pans or cake)
  • Cupcakes are done when a toothpick comes out dry
  • Let cupcakes cool and then pipe on whipping cream using a pastry bag and tip
    • If you don’t have a tip and/or bag, just fill a medium sized zip top bag with the whipping cream and cut a small piece off the corner so that you can easily pipe onto the cupcakes
