As the kids get older, and hungrier, I’ve been looking for new and creative ways to add more whole wheat and fruit into their diet. They are active boys, so getting enough energy in them to start their day and sustain them until the mid-morning snack is a challenge! For me, that means finding new recipes that incorporate good carbohydrates with fresh fruit, a great source of fiber, to start their day. On Fridays, nothing beats our Whole Wheat Waffles topped with fresh fruit to get them powered to end their week strong – and bonus, they don’t even know that they’re eating ‘healthy’, they just think they’re getting a yummy treat for breakfast.
This whole wheat waffle recipe is quick and easy, using ingredients that we normally have on hand – eggs, whole wheat flour (this is substitutable with almond flour if you’d like a gluten free alternative), baking powder, vanilla and milk. As a special treat, feel free to add a couple of dark chocolate mini-chips or a few teaspoons of our Moxy Kitchen Spicy Cinnamon mix.
We bought this great waffle maker on Amazon a few years ago and it has made this recipe quick and easy, even on a weekday – about 3 minutes and the waffle is done. Plus, this is great tool that the kids can do themselves if they’re old enough. The flip functionality is the best part of this particular model because it can be tough to get an even coating of the waffle dough to make that perfect looking waffle, but a flipping iron evens out the liquid and generally means you get a restaurant quality waffle each time!
If you have some extra time, you can also add some shredded fruit or carrot into the mix and it gets an even better power punch to the waffles, just be sure that it’s well incorporated into the dough before pouring into the waffle maker or it will get stuck in the iron.
